Ingredients
  

  • 1 box Lime Jello 3 oz
  • 1 box Strawberry Jello 3 oz
  • cups plain Greek Yogurt divided
  • cups sweetened Desiccated Coconut divided
Substitutions:
  • Use thick coconut cream instead of yogurt for a dairy-free version
  • Use sugar-free Jello packets for reduced calorie option
  • Unsweetened coconut for less sweetness add more yogurt if needed
  • Try raspberry cherry, or cranberry Jello for red variations

Method
 

  1. Line a baking sheet with parchment paper and set aside. Prepare two medium mixing bowls and separate stirring utensils for each color.
  2. Place lime Jello powder in one bowl and strawberry Jello powder in the second.
  3. Add ¾ cup Greek yogurt to each bowl and mix until smooth.
  4. Add 2½ cups sweetened desiccated coconut to each bowl and stir until combined.
  5. Set up two small bowls with ¾ cup coconut each for coating stations.
  6. Roll strawberry mixture into balls (1 tablespoon each) and coat in coconut. Repeat with lime mixture using a separate bowl.
  7. Arrange on the prepared baking sheet and refrigerate uncovered for 4 hours until set.
  8. Serve chilled and enjoy the festive red and green holiday magic!

Notes

Store in an airtight container in the fridge for up to 2 weeks or freeze up to 3 months. Keep red and green balls separate to prevent color bleeding. Thaw in the fridge before serving and roll in coconut to refresh coating.
