Method
- Boil potatoes in salted water until fork-tender, then drain well.
- Heat olive oil in a skillet and cook beef sausages until browned and cooked through. Remove and keep warm.
- Mash potatoes with 1 tablespoon butter and warm milk until creamy. Season with salt and pepper.
- In the same skillet, melt remaining butter and sauté onions until soft and caramelized.
- Sprinkle flour over onions and cook for 1 minute.
- Gradually whisk in broth and simmer until thickened.
- Stir in Worcestershire sauce and mustard if using.
- Serve sausages over mashed potatoes and spoon onion gravy on top.
Notes
For extra creamy mash, ensure potatoes are fully drained before mashing. Slice sausages against the grain for the most tender bites.
