  • 2 beef sausages
  • 1 tablespoon olive oil
  • 1 pound potatoes peeled and cubed
  • 2 tablespoons butter divided
  • 1/4 cup warm milk
  • Salt and black pepper to taste
  • 1 large onion thinly sliced
  • 1 tablespoon all-purpose flour
  • 1 cup beef or chicken broth
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon mustard optional

Method
 

  1. Boil potatoes in salted water until fork-tender, then drain well.
  2. Heat olive oil in a skillet and cook beef sausages until browned and cooked through. Remove and keep warm.
  3. Mash potatoes with 1 tablespoon butter and warm milk until creamy. Season with salt and pepper.
  4. In the same skillet, melt remaining butter and sauté onions until soft and caramelized.
  5. Sprinkle flour over onions and cook for 1 minute.
  6. Gradually whisk in broth and simmer until thickened.
  7. Stir in Worcestershire sauce and mustard if using.
