Ingredients
  

Vanilla Pastry Cream
  • 2/3 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/2 teaspoon salt
  • 3 cups whole milk
  • 2 large eggs
  • 2 tablespoons unsalted butter
  • 1 tablespoon vanilla extract
Graham Cracker Crumble
  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup unsalted butter melted
  • 1 tablespoon granulated sugar
Assembly
  • 2 ripe bananas sliced
  • 3/4 cup heavy whipping cream
  • 1 tablespoon powdered sugar
  • Caramel sauce or dulce de leche

Method
 

  1. Whisk sugar, cornstarch, and salt in a saucepan, then slowly whisk in milk.
  2. Cook over medium heat until thickened, stirring constantly.
  3. Temper eggs with hot milk, return to pan, and cook briefly.
  4. Remove from heat and stir in butter and vanilla; chill until set.
  5. Mix graham cracker crumbs with melted butter and sugar.
  6. Bake crumble at 350°F for 10–12 minutes until golden; cool.
  7. Whip heavy cream with powdered sugar to stiff peaks.
  8. Layer crumble, pastry cream, banana slices, whipped cream, and caramel in serving glasses.
  9. Repeat layers once and chill briefly before serving.

Notes

Slice bananas just before assembling to prevent browning. Assemble no more than 3 hours before serving for best texture.
