Ingredients
  

  • 1 cup cottage cheese
  • 4 large eggs
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh chives chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup bell peppers optional
  • 1 cup spinach optional
  • 1/2 cup sun-dried tomatoes optional

Method
 

  1. Preheat the oven to 375°F (190°C) and grease a baking dish.
  2. Blend the cottage cheese until smooth.
  3. In a bowl, whisk the eggs until frothy.
  4. Fold in the blended cottage cheese, Parmesan cheese, chives, garlic powder, paprika, salt, and pepper.
  5. Add optional vegetables if using and mix gently.
  6. Pour the mixture into the prepared baking dish.
  7. Bake for 15–17 minutes until set with a slight jiggle in the center.
  8. Optional: Broil for 1 minute for a golden top.
  9. Let rest for 2–3 minutes before slicing.
  10. Serve warm.
