Ingredients
  

  • 8 oz pasta rotini, penne, bowtie, or shells
  • 2 ripe avocados
  • 1/2 cup cherry tomatoes halved
  • 1/4 cup red onion thinly sliced
  • 1/4 cup fresh cilantro chopped
  • 2 tablespoons lime juice
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

  1. Cook pasta according to package directions until al dente. Drain and rinse with cold water to cool completely.
  2. Mash avocados in a large bowl, keeping some small chunks for texture.
  3. Add lime juice, olive oil, salt, and pepper. Whisk until creamy.
  4. Add cooled pasta, tomatoes, red onion, and cilantro.
  5. Gently fold ingredients together until evenly coated.
  6. Chill for 15 minutes before serving for best flavor.
