Ingredients
  

  • 12 –16 oz fully cooked smoked sausage kielbasa, andouille, or chicken sausage — sliced ¼-inch thick
  • 2 medium zucchini cut into half-moons
  • 12 oz fresh green beans trimmed and halved
  • 1 large bell pepper any color, cut into 1-inch strips
  • 2 –3 tbsp olive oil or avocado oil spray
  • 2 tsp dried basil
  • 2 tsp dried oregano
  • 1 tsp garlic powder
  • ¾ tsp kosher salt
  • ¼ tsp black pepper
  • Optional: ½ tsp red pepper flakes
  • Optional: Parmesan for serving

Method
 

  1. Preheat air fryer to 400°F for 3–5 minutes.
  2. In a large bowl, toss zucchini, green beans, and bell pepper with oil, basil, oregano, garlic powder, salt, and pepper.
  3. Add vegetables to air fryer basket in an even layer.
  4. Air fry for 10 minutes, shaking halfway through.
  5. Add sliced sausage to the basket and toss with vegetables.
  6. Air fry for an additional 5–10 minutes until vegetables are tender-crisp and sausage is browned.
  7. Optional: top with Parmesan and red pepper flakes while hot.

Notes

Do not overcrowd the basket for best char. Always preheat for crisp results. Use fully cooked sausage for proper timing.
