- Peel and cut pumpkin into even chunks. Remove seeds.
- Combine pumpkin, onion, garlic, broth, and water in a soup pot. Bring to a boil, then reduce to simmer for about 10 minutes, until pumpkin is fork-tender.
- Remove from heat and blend until smooth using a stick or standard blender.
- Return to low heat and stir in cream or milk. Season with salt and pepper. Do not boil after adding cream.
- Serve hot with desired garnishes like cream swirl, parsley, or black pepper.
Notes
Blend thoroughly for a smooth finish. Add cream just before serving for best texture. Freeze leftovers in portions for easy reheating.
