  • 4 thick slices of brioche or challah bread
  • 1 cup canned pumpkin puree
  • 2 large eggs
  • 1 cup whole milk or almond/oat milk
  • 2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1 tsp vanilla extract
  • 2 tbsp granulated sugar
  • Maple syrup for serving

Method
 

  1. In a large bowl, whisk together pumpkin puree, eggs, milk, cinnamon, nutmeg, vanilla extract, and sugar until smooth.
  2. Preheat a skillet over medium heat and lightly grease with butter or cooking spray.
  3. Soak each slice of bread in the pumpkin mixture for about 10 seconds per side, ensuring it is fully coated.
  4. Place the soaked slices on the skillet and cook for about 3 minutes per side, until golden brown and crispy.
  5. Serve immediately with a drizzle of maple syrup. Optionally, top with powdered sugar, whipped cream, or fresh berries.

Use slightly day-old bread for best results. You can substitute the milk and eggs for vegan alternatives like almond milk and flaxseed egg.
