Method
- Gather all ingredients. Squeeze lemons for fresh juice and blend strawberries into a puree if using fresh.
- In a medium saucepan, combine lemon juice, strawberry puree, honey or other sweetener, sea salt, and water. Heat over medium, stirring until the mixture is warm and sweetener is dissolved (do not boil).
- Sprinkle the gelatin over the warm mixture and let it bloom for 5 minutes. Then stir until fully dissolved with no lumps.
- Remove from heat and pour the mixture into silicone molds. Add food coloring if desired. Let cool to room temperature.
- Place molds in the refrigerator for 2–3 hours or until fully set.
- Once set, gently remove gummies from molds and store in an airtight container in the fridge for up to 2 weeks.
Notes
These gummies are a great way to stay hydrated and can be customized with different fruit purees or flavors.
