  • 1 can sweetened condensed milk This provides the creamy base and sweetness for the fudge.
  • 1/4 cup unsalted butter Unsalted butter allows you to control the overall saltiness of the fudge.
  • 1/2 cup pineapple juice Using juice from canned pineapple enhances the tropical flavor.
  • 1/4 cup crushed pineapple Ensure it's well-drained to prevent excess moisture in the fudge.
  • 1/2 tsp vanilla extract A touch of vanilla balances and enhances the other sweet flavors.
  • 1/4 tsp salt A pinch of salt helps to balance the sweetness and bring out flavors.
  • 1/2 cup chopped maraschino cherries These add a festive color and a classic upside-down cake touch.

Method
 

  1. Prepare the pan: Line an 8×8-inch baking dish with parchment paper. Lightly grease it for easy removal.
  2. Caramelized layer: Sprinkle brown sugar evenly over the bottom of the pan. Add chopped maraschino cherries and pecans (if using).
  3. Melt & mix: In a saucepan over medium heat, combine white chocolate chips, sweetened condensed milk, butter, and salt. Stir constantly until melted and smooth.
  4. Infuse with pineapple: Remove from heat and stir in pineapple juice, crushed pineapple, and vanilla extract. Mix well.
  5. Pour & set: Carefully pour the mixture over the brown sugar and cherry layer. Smooth the top with a spatula.
  6. Chill: Refrigerate for at least 4 hours or until firm.
  7. Slice & serve: Once set, lift the fudge out using the parchment paper, cut into squares, and enjoy!
