Ingredients

  • 450 g shrimp, peeled & deveined
  • 1 small red onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 lemon thinly sliced
  • 120 ml white vinegar
  • 60 ml fresh lemon juice
  • 60 ml olive oil
  • 15 g Dijon mustard
  • 5 tsp salt
  • 2.5 tsp black pepper
  • 2.5 tsp red pepper flakes
  • 5 tsp Old Bay seasoning
  • 30 g capers
  • 30 g fresh parsley, chopped

Method

  1. If using raw shrimp, bring a pot of salted water to a gentle boil, add shrimp, and cook for 2-3 minutes until pink and opaque. Drain, rinse with cold water, and pat dry.
  2. In a large bowl or mason jar, whisk together vinegar, lemon juice, olive oil, Dijon mustard, garlic, salt, pepper, red pepper flakes, and Old Bay seasoning.
  3. Layer the shrimp, red onions, lemon slices, capers, and parsley in a glass jar or container. Pour the pickling marinade over the shrimp.
  4. Cover and refrigerate for at least 4 hours.
  5. Serve chilled as an appetizer, on crostini, or over a fresh salad!

Notes

For extra heat, add sliced jalapeños to the marinade. Using cooked shrimp can save time; just marinate and chill. For the best flavor, let it sit overnight!
