Ingredients
  

For the Cookie Base:
  • 1/2 cup 111g salted butter
  • 1/2 cup 115g granulated sugar
  • 1 tsp vanilla extract
  • 1 egg white
  • 1 1/2 cups 228g all-purpose flour
  • 1 tsp baking powder
For the Caramel Layer:
  • 20 caramels unwrapped
  • 1 tbsp milk
For the Chocolate Topping:
  • 2 cups 400g milk chocolate chips

Method
 

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Cream butter and sugar until fluffy, 3–4 minutes.
  3. Beat in egg white and vanilla until combined.
  4. Mix in flour and baking powder until just combined.
  5. Roll dough to 1/4–1/2 inch thick, cut into circles, and place on baking sheets.
  6. Bake 6–8 minutes until puffy and set. Cool completely.
  7. Melt caramels with milk until smooth. Spread over cooled cookies and chill 10–15 minutes.
  8. Melt chocolate in 30-second intervals, stirring until smooth. Spread over caramel layer.
  9. Cool until chocolate is set before serving.

Notes

For a gourmet twist, use sea salt caramels, dark chocolate, or sprinkle with flaky sea salt. Chill cookies properly before adding layers to maintain neatness.
