Ingredients
  

  • 1 pound beef tenderloin or filet mignon, cut into small cubes
  • 1 tablespoon olive oil
  • 1 cup mushrooms finely chopped, such as cremini or button
  • 2 tablespoons shallots finely chopped
  • 2 cloves garlic minced
  • 1 tablespoon fresh thyme or 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 package puff pastry thawed
  • 1 egg beaten, for egg wash
  • 1 tablespoon Dijon mustard optional
  • Flour for dusting
Substitutions:
  • Use vegetable stock instead of olive oil for a vegetarian version.
  • Substitute beef with chicken or pork if preferred.

Method
 

  1. Sear the Beef: Heat olive oil in a skillet over medium-high heat. Season beef with salt and pepper, then sear for 2–3 minutes on each side. Remove and let cool.
  2. Prepare the Mushroom Duxelles: In the same skillet, add mushrooms, shallots, and garlic. Cook until mushrooms are golden brown (5–7 minutes). Stir in thyme, season with salt and pepper, and let cool.
  3. Roll Out the Puff Pastry: On a floured surface, roll out puff pastry sheets to about 1/8 inch thick. Cut into 3×3 inch squares.
  4. Assemble the Bites: Place a spoonful of mushroom duxelles on each square, top with a piece of beef, and fold over. Seal edges with a fork.
  5. Egg Wash and Bake: Preheat oven to 400°F (200°C). Arrange bites on a baking sheet, brush with beaten egg, and bake for 15–20 minutes until golden brown.
  6. Serve and Enjoy: Let cool slightly before serving. Best enjoyed warm!

Notes

For extra flavor, brush the beef pieces with Dijon mustard before wrapping. Avoid overcooking the beef for a tender bite. These can be prepped ahead, frozen, and baked fresh for stress-free entertaining.
