- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Cream together butter, granulated sugar, and brown sugar for 3-4 minutes until light and fluffy.
- Add eggs one at a time, beating well after each, then mix in vanilla extract.
- In a separate bowl, whisk together flour, cornstarch, baking soda, salt, and cinnamon.
- Gradually add dry ingredients to wet mixture and mix just until combined.
- Cover dough and chill for 30 minutes.
- Mix coating sugar and cinnamon, then roll dough balls (about 1/4 cup each) in the mixture to coat.
- Place on baking sheets and bake 12-14 minutes until edges are set and centers look soft.
- Cool 5 minutes on baking sheet, then transfer to wire rack to cool completely.
- For frosting, beat cream cheese and butter until smooth. Add powdered sugar, vanilla, and cinnamon. Mix in milk as needed for smooth, pipeable texture.
- Pipe or spread frosting in a spiral pattern over cooled cookies and dust with extra cinnamon sugar.

Chill dough before baking to prevent excessive spreading. Allow cookies to cool fully before frosting for best texture and appearance.
