  • ½ cup unsalted butter softened
  • 2 large eggs
  • 1 teaspoon vanilla extract

  • 1 cup dried cranberries
  • Zest of 1 orange
  • 8 oz cream cheese softened
  • ¼ cup unsalted butter softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • Zest of 1 orange
  • Additional dried cranberries chopped (optional)
  • Orange zest optional for garnish

Method
 

  1. Preheat oven to 350°F (175°C) and line a baking pan with parchment paper.
  2. Cream together sugar and softened butter until light and fluffy.
  3. Beat in eggs one at a time, then mix in vanilla extract.
  4. In a separate bowl, whisk flour, baking powder, and salt. Add to wet ingredients and mix until just combined.
  5. Fold in dried cranberries and orange zest until evenly distributed.
  6. Pour batter into prepared pan and bake 25–30 minutes, until a toothpick comes out clean.
  7. Cool completely before frosting.
  8. For frosting: Beat cream cheese and butter until smooth. Add powdered sugar gradually, then mix in vanilla and orange zest.
  9. Spread frosting evenly over cooled bars. Garnish with chopped cranberries and orange zest if desired.
  10. Cut into 12 squares and enjoy!
