Peppermint Kiss Cookies

Ingredients
  

  • 240 g all-purpose flour
  • 2 tsp baking powder
  • 0.5 tsp salt
  • 113 g unsalted butter softened
  • 150 g sugar plus 1/2 cup for garnish
  • 2 large eggs
  • 5 ml vanilla extract
  • 15 g coarse green sugar for dough
  • 15 g coarse red sugar for dough
  • 36 Peppermint Kisses unwrapped

Method
 

  1. Preheat your oven to 350 degrees F.
  2. In a bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. Cream together the butter and sugar until light and fluffy, about 2-3 minutes. Mix in the eggs, one at a time. Stir in the vanilla extract.
  4. Add the dry ingredients to the wet mixture until just combined. Divide the dough in half into separate bowls.
  5. Add 1 tablespoon of green sugar to one bowl and mix. Add 1 tablespoon of red sugar to the other bowl and mix.
  6. Divide the remaining 1/2 cup sugar into two bowls. Mix 1 teaspoon green sugar into one bowl and 1 teaspoon red sugar into the other.
  7. Spoon out 1-inch dough balls and roll in colored sugar. Place on the cookie sheet and slightly flatten each ball with your finger before baking.
  8. Bake for 8-10 minutes. Remove from oven and place a peppermint kiss on each cookie, pressing slightly. Let cool completely before moving.
