Ingredients
  

  • 8 cups peeled and thinly sliced fresh peaches
  • ½ cup granulated sugar
  • ½ cup + 2 tablespoons all-purpose flour divided
  • 1 tablespoon cornstarch
  • 2 teaspoons ground cinnamon divided
  • ¼ teaspoon salt
  • ¾ cup packed light brown sugar
  • ½ cup 1 stick salted butter, room temperature
  • 1 ¾ cup old-fashioned oats
  • Optional: ½ cup chopped pecans or walnuts
  • Optional: 1 teaspoon vanilla extract

Method
 

  1. Preheat the oven to 400°F (204°C). Butter a 9×9-inch baking pan.
  2. In a large bowl, mix peaches with granulated sugar, 2 tbsp flour, cornstarch, 1 tsp cinnamon, and salt. Toss gently to coat evenly.
  3. Pour the peach mixture into the prepared pan and spread evenly.
  4. In the same bowl, cream together brown sugar, remaining ½ cup flour, butter, and 1 tsp cinnamon. Stir in oats until crumbly.
  5. Sprinkle the topping evenly over the peaches. Bake for 20–25 minutes until golden and bubbly.
  6. Let rest for 10 minutes before serving. Top with vanilla ice cream or whipped cream if desired.

Notes

Choose ripe but firm peaches. Drain excess liquid if using frozen or canned peaches. Do not skip resting time after baking to ensure a set filling.
