- In a large mixing bowl, whisk together the dry ingredients: flour, sugar, baking powder, baking soda, and salt until no lumps remain.
- In a separate bowl, blend the wet ingredients: milk, egg, melted butter, and vanilla extract until creamy and slightly frothy.
- Slowly pour the wet mixture into the dry mixture, gently folding together until combined; some lumps are acceptable.
- Preheat your oven to 350°F (175°C) and grease the mini muffin pan with cooking spray or butter.
- Spoon the batter into each muffin cavity, filling them about two-thirds full, and bake for 10-12 minutes.
- Let the Poppers cool for a few minutes, then gently pop them out of the tin and serve warm with your favorite toppings.
Notes
These pancake poppers are perfect for dipping in syrup or yogurt. Feel free to add chocolate chips or fruits to the batter for extra flavor!
