  • Lukewarm water for brining
  • Kosher salt
  • Freshly ground black pepper
  • 1 tsp paprika smoked or sweet
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp dried thyme
  • ½ tsp dried basil
  • ½ tsp dried rosemary
  • ½ tsp dried parsley
  • ¼ tsp cayenne pepper optional
  • Olive oil

Method
 

  1. Preheat your oven to 425°F (220°C).
  2. Brine chicken breasts in lukewarm water mixed with kosher salt for 20-30 minutes, then rinse and pat dry.
  3. Mix all spices together in a bowl to create a seasoning blend.
  4. Rub chicken with olive oil and coat evenly with the seasoning blend.
  5. Bake for 22-25 minutes or until internal temperature reaches 165°F (74°C).
  6. Broil on HIGH for the last 3-4 minutes for a crispy finish.
  7. Let the chicken rest for 10 minutes before slicing.
  8. Garnish with chopped parsley and serve immediately.
