  • 2 tbsp butter Divided for stuffing into onions and mixing with seasonings; unsalted preferred.

  • 0.5 tsp salt Season to taste, keeping in mind the salt content of the seasoning blends.

Method
 

  1. Preheat oven to 375°F.
  2. Peel the onions and use a paring knife to carefully cut a hole in the top of each onion about 1-inch in diameter.
  3. Use a small spoon or butter knife to scoop out the onion to create a well that goes halfway down into the onion.
  4. Slice 1 tablespoon of the butter into two pieces and place one piece in the well of each onion.
  5. In a small microwave-safe bowl, melt the remaining 1 tablespoon butter in microwave.
  6. Into the melted butter add the chili onion crunch, minced garlic, paprika, Old Bay seasoning, Cajun seasoning, Italian seasoning, salt, and black pepper.
  7. Pour the mixture evenly over the two onions so it fills the center wells and spread some of the mixture over the sides of the onions.
  8. Wrap each onion tightly in foil and place in a baking dish.
  9. Bake the onions for 50-60 minutes, or until fork tender.
  10. Check the onions at the end of the baking time and if they’re not yet tender, continue to bake until tender, checking every 10 minutes (the baking time will depend on the size of the onions).
  11. Peel the foil back from the top of the onions. Add more melted butter and seasonings if desired.

Notes

These baked onions make a fantastic and flavorful side dish for roasted meats, grilled chicken, or a satisfying vegetarian option. For an extra touch, sprinkle with fresh herbs like parsley or chives before serving. You can also experiment with adding a touch of cheese, like Parmesan, in the last few minutes of baking.
