Ingredients

  • 6 count sweet onions Peeled, cored, and ready for baking
  • 113 g salted butter Cut into small cubes; some for filling, some for melting
  • 5 g Garlic Salt Season generously to taste
  • 5 g Onion Powder Season generously to taste
  • 2 g Black Pepper Use sparingly, to taste
  • 2 g Dried Parsley Season generously to taste
  • 5 g Cajun Seasoning Season generously to taste
  • 2 g Paprika Use sparingly, for color and mild flavor
  • 7 cloves garlic Added to the baking dish for flavor
  • 10 ml soy sauce Adds a savory depth to the onions

Equipment

  • Small baking dish
  • Small knife or apple corer
  • Foil

Method

  1. Cut the tops and ends off the onions, then peel the onion, also removing the single outer layer.
  2. Use a small knife or an apple corer to core out the center of the onion. Do not go all the way through the onion bottom; leave a space for the butter to sit inside the onion.
  3. Cut the butter into small cubes.
  4. Place the onions in a small baking dish, arranging them so they can be touching.
  5. Season the onions generously on the top and in the hole you created with the seasonings. Use the paprika and black pepper sparingly, but you can really go to town with the others.
  6. Press 2 to 3 cubes of butter into the holes you created in each onion.
  7. Melt the remaining butter that you didn't press into the onions. Season it with the same seasonings. Give this a good stir and pour this over each onion. Add the cloves of garlic to the bottom of the baking dish. Then add a couple of shakes of soy sauce to the top of each onion.
  8. Cover the dish with one single piece of foil.
  9. Bake covered at 400 degrees Fahrenheit (200°C) for 45 minutes. Remove the foil at 45 minutes, and bake again for 15 minutes. Keep an eye on the onions as oven temperatures and onion size can affect cook time.
  10. Remove the onions when they are still intact but soft and their tops are golden brown.
  11. When ready to serve, add a garlic clove to the center of each onion and pour some of the butter sauce over the top.

Notes

This can be served as a side dish to any roasted meat. This is also a great appetizer, served alongside some crusty, toasted bread and goat cheese.
