- In a large pot, heat the olive oil over medium heat.
- Add the sliced kielbasa and cook for about 4–5 minutes until it’s nicely browned.
- Toss in the minced garlic and chopped onion; sauté for about 2 minutes until they become fragrant and the onion is translucent.
- Pour in the chicken broth and heavy cream, then bring the mixture to a light simmer.
- Add the pasta, stir well, cover, and let it simmer for 10–12 minutes. Stir occasionally until the pasta is al dente.
- Stir in the grated Parmesan cheese until it melts and the sauce becomes creamy. Then, add the cheddar or mozzarella cheese and stir until completely melted.
- Season with salt, pepper, and smoked paprika if you’re using it.
- Garnish with fresh parsley and serve hot! Optionally, top with extra grated Parmesan for a delightful finish.
