Ingredients
  

  • 12 oz penne or rotini pasta Choose your preferred short pasta shape for this dish.
  • 1 tbsp olive oil Use a good quality olive oil for best flavor.
  • 14 oz kielbasa sausage Pre-cooked kielbasa works best for quick preparation.
  • 3 cloves garlic Minced finely to distribute flavor evenly.
  • 1 small onion Chop finely for a smoother sauce.
  • 2 cups chicken broth Using low sodium allows you to control the seasoning.
  • 1 cup heavy cream Adds richness and creaminess to the sauce.
  • 3/4 cup grated Parmesan cheese Freshly grated Parmesan melts better and has more flavor.
  • 1 1/2 cups shredded cheddar or mozzarella cheese Choose your favorite melting cheese for a gooey texture.
  • 1 pinch Salt Add to taste, adjusting as needed.
  • 1 pinch Pepper Freshly ground black pepper adds the best flavor.
  • 1/2 tsp smoked paprika Adds a subtle smoky depth, highly recommended.
  • 1 sprig Fresh parsley Chop finely for a fresh garnish and pop of color.
  • 100 g spinach Stir in at the end until just wilted for added greens.
  • 100 g peas Frozen peas can be added directly without thawing.
  • 1 medium bell peppers Dice and add for extra color and mild sweetness.
  • 1/4 tsp red pepper flakes Add more or less depending on your desired spice level.

Method
 

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the sliced kielbasa and cook for about 4–5 minutes until it’s nicely browned.
  3. Toss in the minced garlic and chopped onion; sauté for about 2 minutes until they become fragrant and the onion is translucent.
  4. Pour in the chicken broth and heavy cream, then bring the mixture to a light simmer.
  5. Add the pasta, stir well, cover, and let it simmer for 10–12 minutes. Stir occasionally until the pasta is al dente.
  6. Stir in the grated Parmesan cheese until it melts and the sauce becomes creamy. Then, add the cheddar or mozzarella cheese and stir until completely melted.
  7. Season with salt, pepper, and smoked paprika if you’re using it.
  8. Garnish with fresh parsley and serve hot! Optionally, top with extra grated Parmesan for a delightful finish.
