  • 2 tablespoons Honey Local honey works wonders for flavor and caramelization.
  • 3 cloves Garlic Minced, adjust based on taste preferences for a stronger garlic flavor.
  • 2 tablespoons Soy Sauce Consider low-sodium varieties for a healthier option, adds umami.
  • 1 each Bell Peppers (red & yellow) Sliced into strips, or substitute with zucchini or asparagus.
  • 1 cup Baby Carrots Whole or halved, or regular carrots cut into bite-sized pieces; adjust cooking time.
  • 1 pound Baby Potatoes Halved or quartered depending on size, or sweet potatoes for a different flavor.
  • 2 tablespoons Olive Oil Any light cooking oil can be substituted for tossing the ingredients.
  • 2 tablespoons Fresh Parsley or Green Onions Finely chopped, adds freshness and color as a garnish when serving.

Method
 

  1. Preheat the oven to 400°F (200°C). Gather all ingredients and prepare them as directed.
  2. Combine the sliced kielbasa, bell peppers, baby carrots, and baby potatoes in a large mixing bowl. Drizzle with olive oil, then add honey, minced garlic, and soy sauce. Toss until evenly coated.
  3. Line a large baking sheet with parchment paper. Spread the kielbasa and veggie mixture evenly across the sheet in a single layer to ensure even cooking.
  4. Roast in the oven for 20-25 minutes, stirring halfway through, until vegetables are tender and kielbasa is caramelized and slightly crispy.
  5. Remove from the oven and garnish with freshly chopped parsley or green onions. Serve hot immediately for the best taste.

Notes

Feel free to customize the vegetables based on what's in season or what you have on hand. Broccoli, Brussels sprouts, or even mushrooms would also work well. This dish is fantastic for meal prep as leftovers reheat beautifully.
