- Preheat the oven to 400°F (200°C). Gather all ingredients and prepare them as directed.
- Combine the sliced kielbasa, bell peppers, baby carrots, and baby potatoes in a large mixing bowl. Drizzle with olive oil, then add honey, minced garlic, and soy sauce. Toss until evenly coated.
- Line a large baking sheet with parchment paper. Spread the kielbasa and veggie mixture evenly across the sheet in a single layer to ensure even cooking.
- Roast in the oven for 20-25 minutes, stirring halfway through, until vegetables are tender and kielbasa is caramelized and slightly crispy.
- Remove from the oven and garnish with freshly chopped parsley or green onions. Serve hot immediately for the best taste.
Notes
Feel free to customize the vegetables based on what's in season or what you have on hand. Broccoli, Brussels sprouts, or even mushrooms would also work well. This dish is fantastic for meal prep as leftovers reheat beautifully.
