- Preheat the oven to 400°F (200°C). Gather all ingredients.
- Combine the sliced kielbasa, bell peppers, baby carrots, and baby potatoes in a large mixing bowl. Drizzle with olive oil, then add honey, minced garlic, and soy sauce. Toss until evenly coated.
- Line a large baking sheet with parchment paper. Spread the kielbasa and veggie mixture evenly across the sheet in a single layer.
- Roast in the oven for 20-25 minutes, stirring halfway through, until vegetables are tender and kielbasa is caramelized.
- Remove from the oven and garnish with freshly chopped parsley or green onions. Serve hot.
Notes
This recipe is incredibly versatile! Feel free to swap out the vegetables for seasonal favorites like broccoli or green beans. For an extra kick, add a pinch of red pepper flakes to the sauce.
