Method
 

  1. Preheat the oven to 400°F (200°C). Gather all ingredients.
  2. Combine the sliced kielbasa, bell peppers, baby carrots, and baby potatoes in a large mixing bowl. Drizzle with olive oil, then add honey, minced garlic, and soy sauce. Toss until evenly coated.
  3. Line a large baking sheet with parchment paper. Spread the kielbasa and veggie mixture evenly across the sheet in a single layer.
  4. Roast in the oven for 20-25 minutes, stirring halfway through, until vegetables are tender and kielbasa is caramelized.
  5. Remove from the oven and garnish with freshly chopped parsley or green onions. Serve hot.
