Ingredients
  

  • 4 oz cream cheese Ensure it's softened for easy blending.
  • 2 Tbsp powdered sugar Sift if clumpy to ensure a smooth mixture.
  • 1/3 cup pumpkin puree Not pumpkin pie filling; drain if too watery.
  • 2 cups graham cracker crumbs Can be store-bought or crushed from whole crackers.
  • 1/2 tsp pumpkin pie spice Adjust to your taste preference for more spice.
  • 1/2 tsp cinnamon Enhances the warm, autumnal flavor.
  • 2 cups white chocolate chips Use high-quality chips for best melting and flavor.
  • 1-2 tsp coconut oil Helps thin the chocolate for easier dipping.

Method
 

  1. In a mixing bowl, beat softened cream cheese and powdered sugar until light and creamy.
  2. Stir in pumpkin puree, 1 cup graham cracker crumbs, pumpkin pie spice, and cinnamon until well combined. Mix in remaining graham cracker crumbs.
  3. Cover the mixture and refrigerate for at least 30 minutes.
  4. Shape the mixture into balls (about 1 tablespoon each) and place on a lined baking sheet.
  5. Refrigerate again for another 30 minutes to firm up.
  6. Melt white chocolate chips in the microwave until smooth, stirring frequently.
  7. Dip each chilled ball into melted chocolate, allowing excess to drip off before placing back on the baking sheet.
  8. Drizzle any leftover chocolate over the balls and add sprinkles if desired.
  9. Chill again for 20-30 minutes until set.

Notes

These pumpkin balls are a perfect make-ahead treat for parties or holidays. Store them in an airtight container in the refrigerator for up to a week.
