- In a mixing bowl, beat softened cream cheese and powdered sugar until light and creamy.
- Stir in pumpkin puree, 1 cup graham cracker crumbs, pumpkin pie spice, and cinnamon until well combined. Mix in remaining graham cracker crumbs.
- Cover the mixture and refrigerate for at least 30 minutes.
- Shape the mixture into balls (about 1 tablespoon each) and place on a lined baking sheet.
- Refrigerate again for another 30 minutes to firm up.
- Melt white chocolate chips in the microwave until smooth, stirring frequently.
- Dip each chilled ball into melted chocolate, allowing excess to drip off before placing back on the baking sheet.
- Drizzle any leftover chocolate over the balls and add sprinkles if desired.
- Chill again for 20-30 minutes until set.
Notes
These pumpkin balls are a perfect make-ahead treat for parties or holidays. Store them in an airtight container in the refrigerator for up to a week.
