No-Bake Peanut Butter Pretzel Clusters

Ingredients
  

  • 200 g mini pretzels roughly crushed
  • 250 g creamy peanut butter
  • 225 g white chocolate chips
  • 15 ml coconut oil or unsalted butter
  • 75 g chopped peanuts
  • 1 tsp sea salt flakes optional, for sprinkling on top

Equipment

  • Baking Sheet
  • Parchment paper or silicone mat

Method
 

  1. Prepare your workspace: Line a large baking sheet with parchment paper or a silicone baking mat.
  2. Melt the chocolate: In a microwave-safe bowl, combine the white chocolate chips and coconut oil or butter. Microwave in 30-second intervals, stirring vigorously after each, until smooth.
  3. Combine the dry ingredients: In a separate bowl, stir together the crushed pretzels and chopped peanuts. Add the creamy peanut butter and mix until thick and sticky.
  4. Fold in the melted chocolate: Pour the melted chocolate over the peanut butter and pretzel mixture, gently folding until fully incorporated.
  5. Scoop the clusters: Drop rounded portions of the mixture onto the prepared baking sheet, spacing them about an inch apart.
  6. Add the finishing touch: While still wet, sprinkle a few flakes of sea salt over the top of each cluster.
  7. Chill to set: Place the baking sheet in the refrigerator for at least 1 hour, or until firm.
  8. Serve and enjoy: Remove the clusters from the baking sheet and enjoy cold for the best texture.

Notes

These clusters are best enjoyed chilled. Store leftovers in an airtight container in the refrigerator to keep them fresh.
