- In a mixing bowl, combine sweet rice flour, sugar, baking powder, and salt. Whisk together until well blended.
- In a separate bowl, whisk the egg, milk, and vanilla extract together. Gradually pour this mixture into the dry ingredients, stirring until smooth.
- In a deep pot or fryer, heat vegetable oil to 350°F (175°C). You’ll want enough oil to submerge the doughnuts.
- Using a piping bag or a spoon, carefully drop spoonfuls of the batter into the hot oil, shaping them into rings or spheres.
- Fry for about 2-3 minutes on each side or until golden brown.
- Once done, remove from the oil and let them sit on paper towels to absorb excess oil.
- Once cooled slightly, decorate with your choice of toppings.
