- In a food processor, combine the rolled oats, vanilla protein powder, cashew butter, pitted dates, honey/maple syrup, and peppermint extract.
- Pulse until the mixture is crumbly. Add water, 1 tablespoon at a time, blending until a sticky dough forms. Scrape down the sides as needed.
- Transfer the dough to a bowl and fold in the mini chocolate chips until evenly distributed.
- Scoop 1-2 tablespoons of the mixture and roll into balls. Place on a parchment-lined baking sheet and refrigerate for at least 30 minutes to set.
Notes
These protein balls are a fantastic make-ahead snack. Store them in an airtight container in the refrigerator for up to a week.
