Ingredients
  

  • 240 g Cottage Cheese opt for dairy-free yogurt if needed
  • 2 large Eggs
  • 1 tsp Italian Seasoning
  • 120 ml Marinara Sauce
  • 100 g Shredded Mozzarella
  • Optional Pizza Toppings (such as turkey pepperoni or fresh veggies)

Method
 

  1. Preheat your oven to 350°F (175°C) and grease the muffin cups.
  2. In a large mixing bowl, combine cottage cheese and eggs, blending until smooth.
  3. Add Italian seasoning and stir into the mixture until well-distributed.
  4. Spoon the cottage cheese mixture into the greased muffin cups, filling about ¾ full.
  5. Bake the muffin pan in the oven for approximately 35 minutes until firm and light golden.
  6. After baking, add marinara sauce and shredded mozzarella to each mini pizza.
  7. Broil for an additional 3 minutes until the cheese melts and bubbles.
  8. Let cool for a few minutes before removing with a fork and serving.
