Ingredients
  

  • 1 bag Nacho Doritos crushed
  • 2 cups shredded chicken or ground beef
  • 2 cups shredded cheese
  • 1 can 10.75 oz cream of chicken soup
  • 1 can Rotel tomatoes undrained
  • 1/2 cup sour cream
  • 1/2 cup milk
  • 1/2 package taco seasoning

Method
 

  1. Preheat oven to 350°F (175°C) and spray a 2-quart casserole dish with nonstick spray.
  2. In a large bowl, mix chicken or beef with cheese, cream of chicken soup, Rotel tomatoes, sour cream, milk, and taco seasoning.
  3. Spread half of the crushed Doritos in the bottom of the dish.
  4. Layer half of the filling mixture over the chips.
  5. Add the remaining Doritos, then the rest of the filling mixture.
  6. Top with extra cheese if desired.
  7. Cover with foil and bake for 35 minutes.
  8. Let rest for 5 minutes before serving.

Notes

For a spicier version, use pepper jack cheese or hot Rotel. For a lighter option, use Greek yogurt instead of sour cream.
