Ingredients
  

  • 565 g pineapple chunks in juice drained
  • 80 ml Malibu rum or coconut water for non-alcoholic version
  • 15 ml fresh lime juice
  • 15 g honey or maple syrup (optional)
  • 30 g shredded sweetened coconut optional, for garnish
  • 1 packet Maraschino cherries optional, for garnish
  • 1 packet mint leaves optional, for garnish
  • 1 packet toothpicks for serving

Method
 

  1. Drain the pineapple chunks thoroughly using a colander. Let sit for a few minutes to remove excess juice.
  2. In a large bowl or zip-top bag, combine Malibu (or coconut water), lime juice, and honey or syrup. Stir to mix.
  3. Add the drained pineapple chunks and toss gently to coat.
  4. Cover and refrigerate for at least 1 hour, or up to overnight for more intense flavor.
  5. Remove the soaked pineapple and roll or sprinkle with shredded coconut if desired.
  6. Insert toothpicks and top with cherries or mint leaves for presentation.
  7. Serve chilled as tropical finger food or alongside other party appetizers.
