Method
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the softened butter and cream cheese. Use an electric mixer or spatula to blend until the mixture is smooth and creamy.
- Add the chopped lobster meat, shredded crab meat, lemon juice, and lemon zest to the butter and cream cheese mixture. Stir gently to combine without breaking up the seafood too much.
- Mix in the chopped parsley, garlic powder, Old Bay seasoning, salt, and pepper, ensuring everything is evenly distributed.
- Scoop the mixture using a tablespoon or small cookie scoop, and form into small balls or bombs. Place them on a parchment-lined baking sheet.
- Once all mixture is shaped into balls, roll each butter bomb in the breadcrumbs, coating them fully. Place them back on the baking sheet.
- Drizzle a little olive oil over the top of each butter bomb to help them crisp during baking.
- Bake in the preheated oven for about 12-15 minutes, or until golden brown and crispy on the outside.
- Remove from the oven and let them cool slightly before serving.
Notes
Feel free to adjust the amount of Old Bay seasoning, salt, and pepper to your personal taste. These butter bombs are best served warm as an appetizer, perhaps with a squeeze of fresh lemon.
