Ingredients
  

  • 1 cup cooked lobster meat Finely chop for even distribution and texture.
  • 1 cup cooked crab meat Shredded to blend smoothly with other ingredients.
  • 113 g unsalted butter Ensure it's softened to room temperature for easy blending with cream cheese.
  • 57 g cream cheese Soften to room temperature for a smooth, creamy mixture.
  • 15 ml fresh lemon juice Use freshly squeezed for the best bright flavor.
  • 1 tsp lemon zest Adds an aromatic citrus note, enhancing the seafood flavor.
  • 2 tbsp fresh parsley Finely chopped for color and a fresh herbaceous touch.
  • 1 tsp garlic powder A pantry staple that adds depth to the savory profile.
  • 0.5 tsp Old Bay seasoning A classic seafood seasoning; adjust to personal preference.
  • 1 pinch Salt and pepper Season to taste, complementing the Old Bay seasoning and other flavors.
  • 1 cup breadcrumbs Panko breadcrumbs offer the crispiest coating for the butter bombs.
  • 30 ml olive oil Drizzle lightly to ensure a golden and crispy exterior during baking.

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the softened butter and cream cheese. Use an electric mixer or spatula to blend until the mixture is smooth and creamy.
  3. Add the chopped lobster meat, shredded crab meat, lemon juice, and lemon zest to the butter and cream cheese mixture. Stir gently to combine without breaking up the seafood too much.
  4. Mix in the chopped parsley, garlic powder, Old Bay seasoning, salt, and pepper, ensuring everything is evenly distributed.
  5. Scoop the mixture using a tablespoon or small cookie scoop, and form into small balls or bombs. Place them on a parchment-lined baking sheet.
  6. Once all mixture is shaped into balls, roll each butter bomb in the breadcrumbs, coating them fully. Place them back on the baking sheet.
  7. Drizzle a little olive oil over the top of each butter bomb to help them crisp during baking.
  8. Bake in the preheated oven for about 12-15 minutes, or until golden brown and crispy on the outside.
  9. Remove from the oven and let them cool slightly before serving.

Notes

Feel free to adjust the amount of Old Bay seasoning, salt, and pepper to your personal taste. These butter bombs are best served warm as an appetizer, perhaps with a squeeze of fresh lemon.
