Ingredients
  

  • 500 g steak (sirloin or flank steak), sliced
  • 2 cup cooked rice
  • 15 ml olive oil
  • 1 tsp chili powder
  • 1 tsp cumin
  • 0.5 tsp paprika
  • 0.5 tsp garlic powder
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup cherry tomatoes, halved
  • 1 whole avocado, sliced
  • 120 g shredded cheddar cheese
  • 60 g sour cream
  • 30 g chopped cilantro
  • Lime wedges for serving

Method
 

  1. Season steak with chili powder, cumin, paprika, garlic powder, salt, and black pepper.
  2. Heat olive oil in a skillet over high heat.
  3. Cook steak for 2-3 minutes per side until browned and cooked to preferred doneness.
  4. Warm black beans and corn if desired.
  5. Divide cooked rice among serving bowls.
  6. Top with steak, black beans, corn, tomatoes, avocado, and shredded cheese.
  7. Add sour cream and sprinkle with cilantro.
  8. Serve with lime wedges on the side.
