- Place 6 cups of Chex cereal into a large mixing bowl, breaking apart any clusters.
- In a microwave-safe bowl, combine 1 cup of white chocolate chips, 2 tablespoons of unsalted butter, the zest of one lemon, and 2 tablespoons of lemon juice. Microwave for 1 minute, stirring halfway until smooth.
- Pour the melted white chocolate mixture over the Chex cereal and gently fold to coat evenly.
- Transfer to a ziplock bag, add 1.5 cups of powdered sugar and a pinch of salt. Seal and shake until coated.
- Pour the mixture into a serving bowl and garnish with freshly grated lemon zest if desired.
