Ingredients
  

  • 240 g Cottage Cheese
  • 150 g Fresh Blueberries
  • 15 g Lemon Zest
  • 30 ml Honey
  • 60 g Almond Flour
  • 5 ml Vanilla Extract
  • 1 tsp Salt

Method
 

  1. Blend the cottage cheese in a high-speed blender until completely smooth.
  2. Transfer the blended cottage cheese to a mixing bowl. Add almond flour, lemon zest, honey, vanilla extract, and salt. Mix thoroughly.
  3. Fold in fresh blueberries gently to avoid crushing them.
  4. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes.
  5. After chilling, roll portions into balls using a cookie scoop or spoon.
  6. Place the formed bites on a baking sheet and refrigerate for 1-2 hours until firm.

Notes

These bites can be stored in the fridge for a quick snack throughout the week. Feel free to substitute honey with maple syrup for a vegan option.
