- Prepare the Ingredients: Halve 12 to 16 ounces of kielbasa sausage lengthwise, then cut crosswise into ½-inch-wide pieces. Core and chop ½ head green cabbage into rough 1-inch pieces (about 8 cups).
- Heat the Butter and Spices: Melt 2 tablespoons of unsalted butter in a large skillet over medium-high heat. Then add ¼ teaspoon caraway seeds and a pinch of red pepper flakes. Cook until fragrant, about 30 seconds.
- Brown the Sausage: Add the kielbasa and cook until browned, about 6 to 8 minutes.
- Add the Cabbage and Seasonings: Add the cabbage, ¼ teaspoon kosher salt, and ¼ teaspoon black pepper. Cook, stirring occasionally and scraping the bottom of the pan to release browned bits, until the cabbage is tender and lightly browned—about 8 to 10 minutes.
- Finish with Mustard and Vinegar: Add 1 tablespoon whole-grain mustard and 1 tablespoon apple cider vinegar. Toss everything together to combine.
- Serve Immediately: Dish the skillet straight away for the best taste and texture.
