  1. Prepare the Ingredients: Halve 12 to 16 ounces of kielbasa sausage lengthwise, then cut crosswise into ½-inch-wide pieces. Core and chop ½ head green cabbage into rough 1-inch pieces (about 8 cups).
  2. Heat the Butter and Spices: Melt 2 tablespoons of unsalted butter in a large skillet over medium-high heat. Then add ¼ teaspoon caraway seeds and a pinch of red pepper flakes. Cook until fragrant, about 30 seconds.
  3. Brown the Sausage: Add the kielbasa and cook until browned, about 6 to 8 minutes.
  4. Add the Cabbage and Seasonings: Add the cabbage, ¼ teaspoon kosher salt, and ¼ teaspoon black pepper. Cook, stirring occasionally and scraping the bottom of the pan to release browned bits, until the cabbage is tender and lightly browned—about 8 to 10 minutes.
  5. Finish with Mustard and Vinegar: Add 1 tablespoon whole-grain mustard and 1 tablespoon apple cider vinegar. Toss everything together to combine.
  6. Serve Immediately: Dish the skillet straight away for the best taste and texture.

Notes

This dish is perfect for a quick weeknight meal. For a spicier kick, increase the red pepper flakes. Serve with a side of crusty bread or mashed potatoes.
