Key Lime Filling
  • 6 ounces cream cheese Ensure it's softened to room temperature for a smooth filling.
  • 1 can sweetened condensed milk The key to a creamy, sweet filling.
  • 4 large egg yolks Adds richness and helps the filling set beautifully.
  • 0.5 cup key lime juice Freshly squeezed key lime juice is essential for authentic flavor.
  • 1 tbsp lime zest Adds an extra burst of citrus aroma and flavor.
  • 0.5 tsp vanilla extract Balances the tartness of the lime with a subtle sweetness.

Method
 

  1. Preheat your oven to 350°F. Line a 9×9-inch baking pan with parchment paper.
  2. Crush the graham crackers and mix with sugar and melted butter. Press into the bottom of the pan and bake for about 10 minutes.
  3. In a bowl, beat cream cheese until smooth. Gradually add sweetened condensed milk, then mix in egg yolks one at a time. Stir in lime juice, zest, and vanilla until well blended.
  4. Pour the filling over the crust and bake for another 15-18 minutes until set but not browned.
  5. Allow to cool before refrigerating for at least 2 hours. Cut into squares and serve chilled.

Notes

For best results, use fresh key lime juice. The bars are perfect for picnics or parties, easily transportable and always a hit.
