- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Cream together the softened butter and sugar in a large bowl until light and fluffy.
- Add the egg and vanilla extract and mix until well combined.
- Mix in the gelatin powder (from the 3 oz box) until fully incorporated.
- In a separate bowl, whisk together the flour and baking powder.
- Gradually add the dry ingredients to the wet mixture, mixing until a soft dough forms.
- Optional: Roll dough balls (about 1 inch) in extra dry gelatin powder for added color and flavor.
- Place the balls on the prepared baking sheet and flatten slightly with the bottom of a glass or your fingers.
- Bake for 8–10 minutes or until the edges are set. Do not overbake — you want them soft and chewy.
- Let cool on the pan for a few minutes before transferring to a wire rack.
