Ingredients
  

  • 85 g flavored gelatin like strawberry, lime, lemon, or raspberry for bright colors
  • 113 g unsalted butter softened
  • 100 g granulated sugar
  • 1 egg egg
  • 190 g all-purpose flour
  • 2 tsp baking powder
  • 2 tsp vanilla extract
  • to taste g extra gelatin powder optional, for rolling

Method
 

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Cream together the softened butter and sugar in a large bowl until light and fluffy.
  3. Add the egg and vanilla extract and mix until well combined.
  4. Mix in the gelatin powder (from the 3 oz box) until fully incorporated.
  5. In a separate bowl, whisk together the flour and baking powder.
  6. Gradually add the dry ingredients to the wet mixture, mixing until a soft dough forms.
  7. Optional: Roll dough balls (about 1 inch) in extra dry gelatin powder for added color and flavor.
  8. Place the balls on the prepared baking sheet and flatten slightly with the bottom of a glass or your fingers.
  9. Bake for 8–10 minutes or until the edges are set. Do not overbake — you want them soft and chewy.
  10. Let cool on the pan for a few minutes before transferring to a wire rack.
