Ingredients
  

  • 240 g all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp salt
  • 113 g unsalted butter, softened
  • 150 g granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 150 g fresh peaches, peeled and diced
  • 50 g powdered sugar for dusting

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, whisk together 2 cups flour, 1 teaspoon baking powder, and ½ teaspoon salt.
  3. In a large bowl, beat ½ cup softened butter and ¾ cup sugar until light and fluffy (about 3-4 minutes).
  4. Mix in 1 large egg and 1 teaspoon vanilla extract until combined.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Gently fold in 1 cup diced fresh peaches.
  7. Drop rounded balls of dough onto a lined baking sheet, spacing them 2 inches apart. Bake for 18-20 minutes.
  8. Allow cookies to cool for 5 minutes on the baking sheet, then dust with powdered sugar.
