Method
 

  1. Gather all your ingredients. Chop the tomatoes, slice the green onions, and cook the sausage or bacon until crispy and browned, about 5-7 minutes.
  2. In a bowl, whisk together the eggs until fluffy, seasoning them lightly with salt and pepper to taste.
  3. Scramble the eggs in the same skillet over medium heat until they’re just set, about 3 minutes.
  4. On a large tortilla, layer the scrambled eggs, sausage or bacon, cheddar cheese, crispy hash browns, diced tomatoes, green onions, and a dollop of sour cream.
  5. Place a tostada shell or tortilla chip on top for added crunch, then fold the edges of the tortilla up and over the filling to seal the wrap tightly.
  6. Place the wrapped crunchwrap in a heated skillet, seam-side down. Cook until golden brown and crispy, about 3-5 minutes per side.
