Method
- Gather all your ingredients. Chop the tomatoes, slice the green onions, and cook the sausage or bacon until crispy and browned, about 5-7 minutes.
- In a bowl, whisk together the eggs until fluffy, seasoning them lightly with salt and pepper to taste.
- Scramble the eggs in the same skillet over medium heat until they’re just set, about 3 minutes.
- On a large tortilla, layer the scrambled eggs, sausage or bacon, cheddar cheese, crispy hash browns, diced tomatoes, green onions, and a dollop of sour cream.
- Place a tostada shell or tortilla chip on top for added crunch, then fold the edges of the tortilla up and over the filling to seal the wrap tightly.
- Place the wrapped crunchwrap in a heated skillet, seam-side down. Cook until golden brown and crispy, about 3-5 minutes per side.
