Irresistible Easy Salted Caramel Cookies

Ingredients
  

  • 280 g all-purpose flour
  • 30 g cornstarch
  • ½ tsp baking soda
  • ¼ tsp salt
  • 170 g unsalted butter softened
  • 150 g brown sugar
  • 50 g granulated sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 120 ml heavy cream
  • 57 g butter for caramel
  • 50 –67 g brown sugar for caramel
  • 1 tsp flaky sea salt

Method
 

  1. Melt butter and brown sugar for caramel in saucepan.
  2. Add cream and whisk until thickened.
  3. Stir in sea salt and set aside.
  4. Whisk flour, cornstarch, baking soda, and salt.
  5. Beat butter and sugars until fluffy.
  6. Add egg and vanilla and mix.
  7. Combine dry ingredients with wet ingredients.
  8. Fold caramel into dough to create swirls.
  9. Scoop dough onto baking sheet.
  10. Bake at 175°C for 12–14 minutes.
  11. Sprinkle with flaky salt and cool before serving.

Notes

Do not overmix caramel into dough to keep visible swirls. Slightly underbake for soft centers.
