Ingredients
  

  • 113 g unsalted butter softened
  • 100 g brown sugar
  • 100 g granulated sugar
  • 1 large egg
  • 5 ml vanilla extract
  • 187.5 g all-purpose flour
  • 5 tsp baking powder
  • 5 tsp ground cinnamon
  • 60 ml maple syrup
  • 1 pinch salt

Method
 

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper to prevent sticking.
  2. In a large mixing bowl, use an electric mixer to cream together the softened unsalted butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. In another bowl, whisk together the all-purpose flour, baking powder, ground cinnamon, and salt.
  5. Gradually add the dry ingredient mix to the wet ingredients, stirring until just combined. Don’t overmix!
  6. Stir in the maple syrup, ensuring it’s evenly distributed throughout the dough.
  7. Use a cookie scoop or tablespoon to drop rounded balls of dough onto the prepared baking sheet, leaving space between each cookie.
  8. Bake in the preheated oven for about 10-12 minutes or until the edges are golden but the centers look slightly underbaked.
  9. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
