  • 2 cups fresh strawberries sliced, for macerating and garnishing
  • 1/4 cup sugar granulated, for macerating the strawberries
  • 1 cup heavy whipping cream chilled, for whipping into stiff peaks
  • 8 oz cream cheese full-fat, softened to room temperature for smooth mixing
  • 1/2 cup sour cream full-fat, for a tangy, creamy texture in the filling
  • 1 cup powdered sugar sifted, for sweetness and a smooth cheesecake texture
  • 1 teaspoon vanilla extract pure, enhances the flavor of the cheesecake filling
  • 24 cookies Golden Oreo cookies finely crushed, forms the base of the crust
  • 1/2 cup unsalted butter melted, to bind the cookie crumb crust

Method
 

  1. In a medium bowl, combine the sliced fresh strawberries with sugar and let sit for about 15 minutes to macerate.
  2. Whip the heavy whipping cream in a separate bowl until stiff peaks form, about 3-5 minutes.
  3. Beat the softened cream cheese until creamy, then mix in sour cream, powdered sugar, and vanilla extract.
  4. Gently fold the whipped cream into the cream cheese mixture without deflating it.
  5. Combine crushed Golden Oreo cookies with melted butter until crumbs are evenly coated.
  6. Press the cookie mixture firmly into the bottom of a springform pan.
  7. Spread the cream cheese filling evenly over the crust.
  8. Spoon the macerated strawberries over the cream cheese filling evenly.
  9. Cover with plastic wrap and chill in the refrigerator for at least 4 hours or overnight.
  10. Garnish with fresh strawberries before serving; remove sides of the springform pan and enjoy.

For the best texture, ensure cream cheese is fully softened before beating. Adjust sweetness to your preference, and feel free to swap strawberries for other berries like raspberries or blueberries.
