- Beat 8 ounces of softened cream cheese in a mixing bowl until it’s creamy and smooth. Gradually add in 2 cups of powdered sugar and 1 teaspoon of vanilla extract, mixing until you achieve a velvety consistency.
- If desired, fold in a few drops of food coloring to create colorful fillings.
- Using a cookie scoop or tablespoon, portion out the filling and roll it into egg shapes. Place the shaped eggs on a parchment-lined baking sheet and refrigerate for 20 to 30 minutes until firm.
- Break 12 ounces of high-quality chocolate into pieces and melt in a microwave-safe bowl. Microwave in 30-second intervals, stirring after each, until smooth and fully melted.
- Once the filling is firm, dip each egg into the melted chocolate, ensuring it's fully coated, and place back on the parchment-lined baking sheet.
- Before the chocolate sets, generously sprinkle colorful sprinkles over the coating of each egg.
- Transfer the eggs back to the refrigerator and chill for an additional 15 to 20 minutes until the chocolate is completely set.
