  • 4 cups fresh broccoli florets chopped
  • 1 large Honeycrisp apple diced with skin
  • 1/2 cup dried cranberries
  • 1/2 cup chopped pecans or walnuts toasted
  • 1/4 cup red onion finely diced
  • 1/2 cup shredded sharp cheddar cheese optional
  • 1/2 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • Salt and freshly ground pepper to taste

Method
 

  1. Wash and thoroughly dry broccoli florets, then chop into bite-sized pieces.
  2. Dice Honeycrisp apple into 1/2-inch cubes, leaving skin intact.
  3. In a large bowl, combine broccoli, apple, cranberries, nuts, onion, and cheese (if using).
  4. In a small bowl, whisk mayonnaise, apple cider vinegar, honey, salt, and pepper until smooth.
  5. Pour dressing over salad base and toss gently to coat evenly.
  6. Refrigerate at least 30 minutes to 1 hour before serving for flavors to develop.

Notes
