Honey Lime Chicken with Mango Salsa

A delightful grilled chicken dish marinated in a honey-lime mixture and served with fresh mango salsa.

Ingredients
  

  • 2 pieces large boneless, skinless chicken breasts or 4 small
  • 30 ml honey
  • 2 pieces limes juice and zest
  • 30 ml olive oil
  • 2 cloves garlic minced
  • 1 tsp ground cumin
  • 0.5 tsp smoked paprika
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 1 large ripe mango diced
  • 40 g red onion finely chopped
  • 1 small jalapeño seeded and minced (optional for heat)
  • 30 g fresh cilantro chopped
  • 30 ml lime juice
  • g salt and pepper to taste
  • g cooked rice or quinoa, salad greens, or tortillas
  • g lime wedges

Method
 

  1. In a small bowl, whisk honey, lime juice, lime zest, olive oil, garlic, cumin, smoked paprika, salt, and pepper.
  2. Place chicken in a shallow dish or resealable bag. Pour marinade over the chicken and coat well.
  3. Marinate for at least 30 minutes, or up to 12 hours in the fridge.
  4. In a medium bowl, combine diced mango, red onion, jalapeño (if using), and cilantro.
  5. Squeeze lime juice over the mixture and season with salt and pepper. Stir well and let sit 10-15 minutes for flavors to meld.
  6. Preheat grill to medium-high. Grill chicken 5-6 minutes per side, or until internal temperature reaches 165°F (75°C). Let rest 5 minutes before slicing.
  7. Heat 1 tbsp olive oil in a skillet over medium-high. Cook chicken 5-7 minutes per side, until cooked through. Rest before slicing.
  8. Preheat oven to 400°F (200°C). Place chicken in baking dish and bake 20-25 minutes or until fully cooked. Let rest before slicing.
  9. Slice chicken. Serve over rice, quinoa, salad, or tortillas. Top generously with mango salsa and lime wedges. Enjoy!

Notes

For extra flavor, marinate the chicken overnight and use fresh ingredients for the salsa.
