- In a small bowl, mix barbecue sauce with honey and set aside.
- Heat olive oil in a large skillet over medium heat. Season chicken thighs and sear them for 3-4 minutes on each side until golden brown.
- In the same skillet, add chopped onion and minced garlic, sauté for 2-3 minutes.
- Add the uncooked rice to the skillet and toast for about 1 minute.
- Pour in chicken broth (or water) and nestle seared chicken back into the skillet. Drizzle honey BBQ sauce over everything.
- Bring to a gentle boil, cover, and reduce heat to low. Simmer for 18-20 minutes until rice is tender.
- Remove from heat and let rest for 5 minutes, then garnish with chopped parsley before serving.
