  • 1.5 cups Long-Grain White Rice Switch to brown rice for a healthier option, or use basmati for a fragrant alternative.
  • 3 cups Chicken Broth or Water Adds depth of flavor; broth is preferred for richness, but water works too.
  • 1 cup Barbecue Sauce Choose your favorite brand for the best taste, smoky or sweet as preferred.
  • 0.5 cup Honey Infuses sweetness; can substitute with maple syrup or agave nectar for a different flavor.
  • 1 medium Onion Can use yellow, red, or shallots, finely chopped for even cooking.
  • 3 cloves Garlic Fresh minced enhances flavor significantly, don't use pre-minced if possible.
  • 2 tbsp Chopped Parsley For garnish, adds freshness and a pop of color before serving.

Method
 

  1. In a small bowl, mix barbecue sauce with honey and set aside.
  2. Heat olive oil in a large skillet over medium heat. Season chicken thighs and sear them for 3-4 minutes on each side until golden brown.
  3. In the same skillet, add chopped onion and minced garlic, sauté for 2-3 minutes.
  4. Add the uncooked rice to the skillet and toast for about 1 minute.
  5. Pour in chicken broth (or water) and nestle seared chicken back into the skillet. Drizzle honey BBQ sauce over everything.
  6. Bring to a gentle boil, cover, and reduce heat to low. Simmer for 18-20 minutes until rice is tender.
  7. Remove from heat and let rest for 5 minutes, then garnish with chopped parsley before serving.

Feel free to adjust the amount of honey or BBQ sauce to suit your taste preference. For best results, ensure the chicken is cooked through and the rice is perfectly tender. This dish reheats well for leftovers!
