Ingredients
  

  • 12 ounces pasta spaghetti, fettuccine, or penne
  • 28 ounces crushed tomatoes
  • 4 –5 cloves garlic minced
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 1 cup freshly grated Parmesan cheese
  • Salt to taste
  • Black pepper to taste
  • Fresh basil or parsley for garnish

Method
 

  1. Bring a large pot of salted water to a boil and cook pasta until al dente. Reserve 1 cup of pasta water, then drain.
  2. Heat olive oil in a large skillet over medium heat.
  3. Add minced garlic and sauté for 1–2 minutes until fragrant.
  4. Stir in crushed tomatoes and simmer for 5–7 minutes.
  5. Lower heat and slowly whisk in heavy cream until smooth.
  6. Add cooked pasta to the sauce and toss to coat evenly.
  7. Use reserved pasta water as needed to loosen the sauce.
  8. Season with salt and black pepper.
  9. Stir in Parmesan cheese until melted.
  10. Garnish with fresh basil or parsley and serve hot.

Notes

For a lighter version, use half-and-half instead of heavy cream. Add red pepper flakes for heat or grilled shrimp for extra protein.
