  • 8 oz sharp cheddar cheese freshly shredded
  • 1/3 cup sourdough discard unfed
  • 2 tbsp unsalted butter cold and cubed
  • 1/2 cup all-purpose flour
  • 1 tsp salt
  • 1/2 tbsp ranch seasoning optional

  • Flaky sea salt

Method
 

  1. Add cheese, sourdough discard, butter, flour, salt, and seasoning to a food processor.
  2. Pulse until a cohesive dough forms.
  3. Wrap dough and chill for at least 20 minutes.
  4. Preheat oven to 350°F (175°C) and line baking sheets with parchment.
  5. Roll dough between parchment to 1/8-inch thickness.
  6. Cut into 1-inch squares and poke a hole in each cracker.
  7. Sprinkle lightly with flaky sea salt.
  8. Bake for 15–18 minutes until golden and crisp.
  9. Cool completely, then separate crackers.

Notes

For best texture, shred cheese from a block and allow crackers to cool fully before storing.
