Ingredients
  

  • 1/2 cup strong hot coffee or 2 shots espresso
  • 2 cups milk of choice dairy or non-dairy
  • 2 tablespoons pumpkin puree
  • 1 tablespoon sugar or maple syrup
  • 1 tablespoon vanilla extract
  • 1/2 teaspoon pumpkin pie spice plus more for serving
  • Whipped cream optional, for topping

Method
 

  1. In a saucepan, heat milk, pumpkin puree, and sugar over medium heat until steaming, but not boiling.
  2. Remove from heat and whisk in vanilla, pumpkin pie spice, and strong coffee or espresso. Whisk vigorously for 30 seconds to froth.
  3. Pour into two mugs and top with whipped cream and a sprinkle of pumpkin pie spice. Serve immediately.

Notes

Use bold coffee or espresso for best flavor balance. Do not boil the milk to prevent curdling. For vegan versions, use oat, almond, or coconut milk and coconut whipped cream. Sweetness can be adjusted with maple syrup, coconut sugar, or stevia. Try making an iced version with cold brew over ice.
